Salted Caramel Brownie Bites

So, the other day I was craving chocolate. Bad. And I must have been craving salt, and maybe caramel, too. So this is what happened. A little Pinterest search and these little beauties kept popping up. So I decided to try it out. They were so easy, and so, so yummy.


Salted Caramel Brownie Bites
Makes 30 bites

3/4 cup butter, plus more for greasing the pan
4 oz good quality unsweetened chocolate
2 cups sugar
3 eggs
1 Tablespoon vanilla
1/2 cup buttermilk
1 1/2 cups flour

15 caramels
Large granule salt


Preheat oven to 350 degrees. Grease mini-muffin tin with butter.
In a large microwave bowl, combine butter and chocolate. Melt in microwave on high at 1 minute intervals, stirring in between. Do not let mixture sizzle. When completely melted and smooth, immediately stir in sugar. Continue stirring until smooth. Add eggs, one at a time. Stir in vanilla and buttermilk. Add flour; stir just until combined.
Scoop batter into mini-muffin tin, filling about 2/3 full. Bake for about 15 minutes (keep an eye on them, they'll be slightly puffed in the middle, and a toothpick inserted in the center will come out clean).
Unwrap the caramels, put into an oven-proof dish. Put in the oven for the last 5 minutes or so, stirring occasionally, until the caramel is melted.

Let them cool for a couple minutes in the pan while you finish melting the caramel. Press the center of each brownie down with the back of a spoon, making a small crater. Fill each crater with caramel. It won't take as much as you think, so start small and add more as you need. Sprinkle with a little salt, and let them finish cooling on a wire rack. Then eat them all.
